One of my favorite things about the holiday season is that friends and family make it a point to gather together and celebrate at the table. The holiday season is full of feasting because in addition to celebration days like Thanksgiving, Hanukkah, Christmas, and New Years, there are many days between those holidays that tend to be centered around meal events such as potlucks, work parties and dinner socials. Almond Basil Ricotta

Ingredients:

  • 1 cup raw, unsalted almonds
  • 1 cup water, plus more for soaking the almonds
  • 12 inch square of cheesecloth
  • Salt to taste
  • ¼ cup fresh basil, minced
  • 1 clove fresh garlic, crushed – optional

Shopping List:

  • 15 oz or less of raw, unsalted almonds – $4.99
  • 1 container of salt – $1.50
  • 1 bunch of fresh basil – $1.99
  • 1 bulb of garlic – $0.75

Chunky Guacamole

  • 4-5 medium tomatoes, diced
  • 2 shallots, diced
  • 2 cloves garlic, minced
  • ½ jalapeño, seeds removed, diced
  • ⅓ bunch cilantro, chopped finely
  • ¼ teaspoon ground cumin
  • 1 lime, juiced
  • 3 ripe avocados
  • Trader Joe’s Chile Lime Seasoning Blend (or salt and pepper,) to taste

  • Pinch of red chili flakes, optional
