Vitamix My Breakfast

I recently became the proud new owner of a Vitamix, and I can say without exaggerating that it has been a life changer! One of the biggest differences it has made in my life is that it has revamped my breakfast game. I have always struggled with planning breakfasts. I am not a morning person and so planning and preparing the most important meal of the day has been a challenge.

The Vitamix, or any great blender for that matter, provides me the inspiration and tool that I need to create a budget and time friendly breakfast. With a blending tool, you can easily make batters, bowls, and smoothies as the perfect start to your day.

I wanted to share some of my favorite easy to make and delicious mixed breakfasts for everyone to enjoy! These recipes are a variety of hot, cold, fresh and flavorful meals that you can make on the go or savor at home. These plant based breakfasts are protein-packed, oil-free and refined sugar free recipes that will help you jump start your day! Once you stock up on some of the bulk ingredients you need, you will be able to make them week after week by just picking up some fresh produce. I hope you love adding these breakfasts to your mix as much as I do!

Nuts and Grains
Smoothie

Ingredients

  • ⅓ Cup ice cubes
  • 1 Banana, peeled, halved
  • 1 Tablespoon peanut butter
  • 1 Tablespoon maple syrup (original recipe uses honey)
  • 1 Tablespoon rolled oats
  • 1 Cup unsweetened rice milk

The Acai Bowl

Ingredients

  • ¾ Cup apple juice
  • 1½ Cup frozen blueberries
  • Sambazon Acai Berry Superfruit Pack, broken into 4 pieces
  • 1 Frozen banana, peeled, halved
  • 2 Cups kale, chopped
  • ¼ Teaspoon matcha green tea powder

Vegan + Gulten-Free
Crepes

  • 3/4 Cup oat flour
  • 3/4 Cup buckwheat flour
  • 1 Cup coconut milk
  • 1 Cup oat milk
  • 1 Tablespoon almond butter
  • 2 Tablespoons maple syrup
  • 1 Banana

For The Filling

  • 3 Diced apples
  • 3 Tablespoons maple syrup
  • 1 Teaspoon ground cinnamon
  • Some frozen raspberries
  • Extra maple syrup

Applesauce

  • 1 Teaspoon lemon juice
  • 1/2 Teaspoon maple syrup
  • 2-4 Tablespoons water

  • 1 Ripe banana frozen

  • 1 Teaspoon vanilla extract
